July is for Lovers

Summer is finally here and The Ethical Butcher has a packed month ahead!
July is brimming with events of all kinds! There are dinners, classes and of course, BBQ’s. Hope to see you all!!

First, BCN/PDX July Events:

BCN/PDX: Curing The Ethical Butcher Way

After many months of requests I have put together a series of bacon making classes. Over three sessions we’ll cure with fruits, teas, coffee, cocoa and spirits and more. We’ll discuss the curing process and have plenty of time for experimentation as each person cures their very own slab! You’ll leave EACH session with a slab and directions on how to finish the cure, folks who attend all three sessions will take home a total of about 8 lbs. of bacon by the end of the series! Good thing it freezes well! Sign up for one session or all three!

July 13th- Curing The Ethical Butcher Way: Fruits and Flowers
More than just sweets, learn to cure with seasonal fruits, jams, and edible flowers like chamomile, lavender and roses.

July 20th- Curing The Ethical Butcher Way: Coffee, Tea and Spirits
Curing with your favorite beverage is a fun way to enjoy flavors you love in an entirely different way! Whether you prefer tequila, single-origin coffee or Darjeeling, you'll look at your next drink in a whole new light after this class.

July 27th- Curing The Ethical Butcher Way: After the Cure...Glazes and Crusts
This final session will focus on creative touches AFTER the cure. Some longstanding curing traditions call for rolling slabs in oatmeal or split peas before cooking, a really nice touch.
We'll also try cornmeal, rye flakes, shredded coconut and more!

This Saturday, Lilla Farms will be hosting Tressa and I as we present a beautiful meal right on the farm. The ticket includes dinner and 1 glass of wine as well as a tour of the farm with owner CeCe Hall. Lilla Farms has been providing me with their wonderful lavender for months, I often use it in my bacon cures and the infused liquors I cook with. Lucky for us, Lilla Farms is just in the Northwest hills of Portland, this is a rare chance to enjoy one of our farm meals without the long car ride. The menu is full of summer flavors and this will be a perfect way to spend a summer evening! Join us!

EVERY Friday this summer Tressa and I will be putting out delicious BBQ! Our first one went so well, people asked us to make it a regular event, so we are!

Plates are only $10, with dessert and wine offered separately. Come as you are, we start at 7 pm and go until the food is gone! No reservations required. Family-style seating on our picnic tables in the big backyard, a fire pit and general great Summertimey-ness will be waiting for you...
